Niman Ranch Filet Mignon

served with Mushroom Ragout and Garlic Mashed Potatoes

The Garlic Mashed Potatoes are as simple as they are delicious, prepared with roasted garlic, cream, butter, and salt.

Mushroom Ragout -

 Shitake Mushrooms

 Oyster Mushrooms

 Button Mushrooms

4 cloves

 Chopped Garlic

2 ea

 Diced onions

1 Bunch

 Chopped Parsley

1 cup

 Dry White Wine

2 cups

 Chicken Broth

1#

 Sweet Butter

to taste

 Salt and Black Pepper

PROCEDURE

In 4oz of butter saute garlic and parsley.

Add onions, cover and cook on low for 5 minutes.

Add mushrooms and saute over high heat. Stir often to prevent burning.

When liquid begins to seep out of mushrooms add wine and chicken broth.

Bring to a simmer and stir in remaining butter.

Adjust seasoning with salt and fresh black pepper.
