Mushroom Ragout -

Shitake Mushrooms

Button Mushrooms
4 cloves
Chopped Garlic
2 ea
Diced onions
1 Bunch
Chopped Parsley
1 cup
Dry White Wine
2 cups
Chicken Broth

Sweet Butter
to taste
Salt and Black Pepper
In 4oz of butter saute garlic and parsley.
Add onions, cover and cook on low for 5 minutes.
Add mushrooms and saute over high heat. Stir often to prevent burning.
When liquid begins to seep out of mushrooms add wine and chicken broth.
Bring to a simmer and stir in remaining butter.
Adjust seasoning with salt and fresh black pepper.
